Ingredients
- 2 liters water
- 300 grams potatoes
- 200 grams turnip greens (or collard greens)
- 150 grams chorizo sausage
- 1 teaspoon smoked paprika
- 2 cloves garlic
- 2 tablespoons olive oil

Method
- In a large pot, bring 2 liters of water to a boil.
- Peel and dice the potatoes into small cubes and add them to the pot. Cook for about 15 minutes until they are tender.
- While the potatoes are cooking, slice the chorizo into thin rounds and finely chop the garlic.
- In a separate pan, heat the olive oil over medium heat. Add the chorizo and garlic, sautéing until the chorizo is browned and the garlic is fragrant.
- Once the potatoes are tender, add the sautéed chorizo and garlic mixture to the pot.
- Incorporate the turnip greens, smoked paprika, salt, and black pepper. Stir well and simmer for an additional 10 minutes.
- Taste and adjust the seasoning if necessary. Remove from heat and let it sit for a few minutes before serving.
- Serve hot in deep bowls, garnished with a drizzle of olive oil.
