Ingredients
- 4 sheets rice paper
- 100 g minced pork
- 50 g shrimps, peeled and chopped
- 2 egg
- 2 tbsp green onions, chopped
- 100 g cheddar cheese, grated
- 2 tbsp mayonnaise
- to taste sweet chili sauce
- to taste black pepper
- 1 tbsp cilantro, chopped
- for brushing vegetable oil
Method
- Preheat a non-stick pan over medium heat and brush it lightly with vegetable oil.
- Place a rice paper sheet on the pan and let it warm for about 30 seconds until it softens.
- Spread a layer of minced pork and chopped shrimp evenly over the rice paper.
- Crack an egg onto the toppings and sprinkle chopped green onions, black pepper, and cilantro.
- Cover with grated cheddar cheese and let it cook until the cheese melts and the edges become crispy, about 5-7 minutes.
- Drizzle mayonnaise and sweet chili sauce over the top before folding the rice paper in half.
- Remove from the pan, cut into wedges, and serve hot with additional sauce on the side.
