Bissara
Bissara is a traditional Moroccan fava bean soup often enjoyed for breakfast, particularly in the cold months. This comforting dish is rich in flavor, garnished with olive oil, cumin, and fresh herbs, making it a wholesome start to the day.

Ingredients
- 250 g dried fava beans, soaked overnight
- 1 L water
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp cumin powder
- to taste salt
- 2 tbsp fresh parsley, chopped
- 2 lemon wedges
Method
- Drain and rinse the soaked fava beans.
- In a large pot, combine the fava beans and water. Bring to a boil, then reduce heat and simmer for about 30 minutes or until the beans are tender.
- Add the minced garlic, cumin, and salt to the pot. Cook for an additional 10 minutes, stirring occasionally.
- Using an immersion blender, blend the soup until smooth. If it's too thick, add more water to reach your desired consistency.
- Ladle the soup into bowls and drizzle with olive oil.
- Garnish with chopped parsley and serve with lemon wedges on the side.
