Moroccan lentil stew

Ingredients
- 200 g green or brown lentils, rinsed
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp paprika
- 1/2 tsp cinnamon powder
- 1 L vegetable broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- to taste fresh cilantro, chopped for garnish
Method
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rinsed lentils, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well to coat the lentils in the spices.
- Pour in the vegetable broth and add the tomato paste. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes until lentils are tender.
- Taste and adjust seasoning if needed. If the stew is too thick, add a little more broth or water to reach your desired consistency.
- Serve hot, garnished with fresh cilantro.
