Lomo saltado
Lomo saltado is a vibrant Peruvian stir-fry that combines marinated beef, onions, and tomatoes with a hint of soy sauce, served with crispy French fries and fluffy rice. It's a perfect dish for festive gatherings or weekend meals, showcasing the fusion of Peruvian and Asian flavors.

Ingredients
- 500 g beef sirloin, sliced
- 1 onion, sliced
- 2 tomatoes, sliced
- 3 tbsp soy sauce
- 2 tbsp vinegar
- 2 cloves garlic, minced
- 1 aji amarillo, sliced
- to taste coriander, chopped
- 2 tbsp vegetable oil
- to taste salt
- to taste pepper
- 300 g French fries
- 300 g cooked rice
Method
- Heat the vegetable oil in a large skillet or wok over high heat.
- Add the sliced beef and cook until browned, about 2-3 minutes.
- Add the minced garlic, onion, and aji amarillo; stir-fry for another 2 minutes until the onion is translucent.
- Stir in the tomatoes, soy sauce, vinegar, salt, and pepper; cook for 2 more minutes.
- Meanwhile, prepare the French fries according to package instructions or fry fresh potatoes until crispy.
- To serve, place a portion of rice on a plate, top with the beef stir-fry, and add French fries on the side.
- Garnish with chopped coriander before serving.
