Ingredients
- 250 g spaghetti
- 150 g spinach, fresh
- 50 g basil, fresh
- 50 g Parmesan cheese, grated
- 30 g walnuts, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- 1 L water
Method
- Bring 1 liter of water to a boil in a large pot. Add salt and cook the spaghetti according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, prepare the sauce. In a pan, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the fresh spinach and basil to the pan, cooking until wilted, about 3-4 minutes. Remove from heat.
- In a blender, combine the sautéed spinach and basil mixture with the walnuts and grated Parmesan cheese. Blend until smooth, adding a bit of water if necessary to achieve a creamy consistency.
- Once the spaghetti is cooked, drain it and return it to the pot. Pour the green sauce over the pasta and toss to combine, making sure all the spaghetti is well coated.
- Season with salt and black pepper to taste. Serve immediately, garnished with extra Parmesan if desired.
