Baklava
Baklava is a rich, sweet pastry made of layers of filo dough filled with chopped nuts and sweetened with honey and syrup. This weeknight-friendly version simplifies the traditional method while delivering the same delightful flavors and textures.

Ingredients
- 250 g filo pastry sheets, thawed
- 150 g walnuts, finely chopped
- 100 g almonds, finely chopped
- 1 tsp ground cinnamon
- 150 g butter, melted
- 100 g honey
- 100 ml water
- 100 g sugar
- 1 tsp vanilla extract
Method
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the chopped walnuts, almonds, and ground cinnamon.
- Brush a baking dish (about 25x30 cm) with melted butter. Layer 5 sheets of filo pastry, brushing each with butter before adding the next.
- Spread half of the nut mixture over the layered pastry.
- Layer 5 more sheets of filo, again brushing each with butter, then add the remaining nut mixture on top.
- Top with another 5 sheets of buttered filo, and cut the baklava into diamond or square shapes.
- Bake in the preheated oven for 30-35 minutes until golden brown.
- While baking, combine honey, water, sugar, and vanilla in a saucepan. Bring to a boil, then simmer for 10 minutes.
- Once the baklava is baked, pour the hot syrup over it and let it cool completely before serving.
