Moustalevria
Moustalevria is a traditional Greek dessert made from must (grape juice) that is thickened with cornstarch to create a unique pudding-like texture. Often flavored with cinnamon and garnished with nuts, it's a delightful treat that captures the essence of Greek harvest celebrations.

Ingredients
- 1 L grape must
- 200 g cornstarch
- 150 g sugar
- 1 cinnamon stick
- 100 g walnuts, chopped
- 500 ml water
Method
- In a large pot, combine the grape must and water, and bring to a gentle boil over medium heat.
- Add the cinnamon stick and let it simmer for about 10 minutes to infuse the flavor.
- In a separate bowl, mix the cornstarch with a little cold water to create a smooth paste.
- Slowly stir the cornstarch mixture into the simmering grape must, whisking continuously to prevent lumps.
- Add the sugar and continue to stir until the mixture thickens, about 5-7 minutes.
- Remove from heat and pour the mixture into serving dishes or a large mold.
- Let it cool at room temperature, then refrigerate for at least 4 hours until set.
- Before serving, sprinkle with chopped walnuts and a dusting of cinnamon.
