Elderflower cordial
Elderflower cordial is a refreshing, floral drink made from elderflower blossoms. Perfect for summer, this sweet syrup can be mixed with water or sparkling wine, creating a delightful beverage with a fragrant aroma and a light, golden hue.

Ingredients
- 15 elderflower heads, fresh
- 1.5 L water
- 1 kg granulated sugar
- 4 lemons, juiced
- 50 g citric acid
- 1 orange, zested
Method
- In a large pot, bring the water to a boil.
- Remove from heat and add the elderflower heads, lemon juice, lemon zest, and citric acid. Stir well to combine.
- Cover and let the mixture steep for 24 hours at room temperature.
- Strain the mixture through a fine sieve or muslin cloth into another pot, discarding the solids.
- Add the granulated sugar to the liquid, stirring over low heat until fully dissolved.
- Bring the mixture back to a gentle boil for around 5 minutes to ensure proper preservation.
- Let it cool, then pour the cordial into sterilized bottles and seal tightly.
- Store in the fridge and dilute with water or sparkling water before serving.
