Ingredients
- 100 ml pandan juice, from blended pandan leaves
- 200 ml coconut milk
- 150 g sugar
- 200 g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 100 g grated coconut, steamed
- 1 tsp vanilla extract
Method
- Preheat the oven to 180°C (350°F) and grease a 20 cm round cake pan.
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Add the pandan juice and coconut milk, mixing until well combined.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth.
- Fold in the grated coconut and vanilla extract into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
