Rujak

Ingredients
- 1 mango, sliced
- 200 g pineapple, diced
- 1 cucumber, sliced
- 150 g jicama, diced
- 2 tbsp tamarind paste
- 50 g palm sugar, grated
- 1 red chili, finely chopped
- 1/2 tsp salt
- 2 tbsp lime juice
- 50 g peanuts, crushed
Method
- In a bowl, combine the tamarind paste, grated palm sugar, chopped red chili, salt, and lime juice to create the dressing. Mix well until the sugar is dissolved.
- Prepare the fruits: slice the mango, dice the pineapple and jicama, and slice the cucumber. Place all the fruits in a large mixing bowl.
- Pour the dressing over the mixed fruits and toss gently to coat all the pieces evenly.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve the rujak in a traditional wooden bowl or a large plate.
- Sprinkle the crushed peanuts on top for added crunch before serving.
