Ingredients
- 500 g cooked rice, preferably day-old
- 150 g chicken breast, diced
- 100 g shrimp, peeled and deveined
- 2 egg, beaten
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red chili, sliced
- 3 tbsp soy sauce, sweet
- 1 tbsp oyster sauce
- 3 tbsp vegetable oil
- to taste salt
- to taste pepper
- 2 green onions, sliced
Method
- Heat the vegetable oil in a large pan or wok over medium heat.
- Add the diced onion and garlic, sautéing until fragrant and translucent.
- Add the diced chicken and shrimp, cooking until the chicken is no longer pink.
- Push the meat to one side of the pan and pour the beaten eggs into the empty space, scrambling them until cooked.
- Mix in the cooked rice, breaking up any clumps, and stir well to combine with the chicken and egg.
- Add the sweet soy sauce and oyster sauce, mixing thoroughly. Season with salt and pepper to taste.
- Stir in the sliced red chili and green onions, cooking for another minute.
- Serve hot, garnished with additional green onions if desired.
