Ingredients
- 200 g spelt, rinsed
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 zucchini, diced
- 400 g canned tomatoes, chopped
- 1.5 L vegetable broth
- 2 tbsp olive oil
- to taste fresh parsley, chopped

Method
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery. Sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and cook for 3-4 minutes.
- Incorporate the chopped canned tomatoes and rinsed spelt, stirring well.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat and let the soup simmer for about 30-35 minutes, until the spelt is tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with fresh chopped parsley.
