Ingredients
- 2 mackerel, cleaned and filleted
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 2 tbsp lemon juice
- 3 tbsp extra virgin olive oil

- 2 lemon wedges, for serving
Method
- In a bowl, combine minced garlic, parsley, lemon juice, olive oil, salt, and black pepper to create a marinade.
- Rub the marinade over the mackerel fillets, ensuring they are evenly coated. Let them marinate for at least 30 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Place the mackerel fillets skin-side down on the grill. Grill for about 4-5 minutes on each side, or until the fish is cooked through and has grill marks.
- Once cooked, remove the mackerel from the grill and let it rest for a few minutes.
