Ingredients
- 250 g pasta (spaghetti or fettuccine)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 400 g fresh tomatoes, chopped
- 1, optional jalapeño, minced
- 30 g fresh cilantro, chopped
- 2 tbsp lime juice

Method
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
- Add minced garlic and cook for an additional minute until fragrant.
- Stir in the red bell pepper and zucchini, cooking until they soften, about 5 minutes.
- Add the chopped tomatoes and jalapeño, if using. Cook for another 5-7 minutes until the tomatoes break down into a sauce.
- Season the sauce with salt, pepper, and lime juice. Mix well.
- Add the cooked pasta to the skillet and toss to combine with the sauce and vegetables.
- Remove from heat and stir in the chopped cilantro.
- Serve hot, garnished with additional cilantro if desired.
