Sopa de calabaza

Ingredients
- 500 g pumpkin, peeled and cubed
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 L vegetable broth
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- to taste cream, for garnish
- to taste fresh parsley, chopped, for garnish
Method
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic, sautéing until they become translucent.
- Stir in the diced carrot and pumpkin cubes, cooking for another 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes, or until the pumpkin is tender.
- Use an immersion blender to puree the soup until smooth. If you prefer, you can transfer it to a blender in batches.
- Season with salt and black pepper to taste, and heat through if necessary.
- Ladle the soup into bowls and garnish with a swirl of cream and chopped parsley before serving.
