Bableves

Ingredients
- 200 g white beans, soaked overnight
- 300 g smoked pork knuckle or ham hock
- 1 carrot, diced
- 1 onion, diced
- 1 potato, diced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tbsp paprika, sweet
- to taste salt
- to taste black pepper
- 1.5 L water
Method
- Rinse the soaked beans and place them in a large pot with 1.5 L of water, along with the smoked pork knuckle.
- Bring to a boil, then reduce heat to a simmer and cook for about 45 minutes, skimming any foam from the surface.
- Add the diced onion, carrot, potato, garlic, bay leaf, paprika, salt, and pepper to the pot.
- Continue to simmer for another 30-40 minutes, until the beans and vegetables are tender.
- Remove the pork knuckle, shred the meat, and return it to the soup, discarding the bone and skin.
- Taste and adjust seasoning if needed, then let the soup rest for a few minutes before serving.
- Serve hot, garnished with fresh parsley if desired.
