Ingredients
- 200 g tomatoes, diced
- 150 g cucumbers, diced
- 1 red onion, finely chopped
- 1 green bell pepper, diced
- 50 g fresh parsley, chopped
- 20 g fresh mint, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- to taste salt
- to taste black pepper
Method
- In a large bowl, combine the diced tomatoes, cucumbers, red onion, and green bell pepper.
- Add the chopped parsley and mint to the bowl.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and gently toss to combine all ingredients.
- Let the salad sit for about 10 minutes to allow flavors to meld.
- Serve in a traditional serving bowl, garnished with extra herbs if desired.
