Ingredients
- 1 l milk
- 100 g, rinsed rice
- 150 g sugar
- 40 g cornstarch
- 500 ml water
- 1 tsp vanilla extract
- to taste cinnamon
Method
- In a saucepan, combine the rinsed rice and water. Bring to a boil, then lower the heat and simmer for about 15 minutes until the rice is tender.
- In a separate saucepan, heat the milk over medium heat until it is warm but not boiling.
- Once the rice is cooked, add the warm milk to the rice mixture. Stir in the sugar and vanilla extract, and continue to cook for another 10 minutes, stirring occasionally.
- In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Gradually add this to the rice pudding while stirring continuously to avoid lumps.
- Cook for another 5 minutes until the pudding thickens. Remove from heat and let it cool for a bit.
- Pour the pudding into serving bowls or cups and let it cool to room temperature. Then place in the refrigerator for at least 2 hours to set.
- Before serving, sprinkle with cinnamon to taste.
