Ingredients
- 2 tbsp olive oil
- 1 green bell pepper, chopped
- 3 tomatoes, peeled and diced
- 4 egg, beaten

- 2 tbsp fresh parsley, chopped
Method
- Heat the olive oil in a skillet over medium heat.
- Add the chopped green bell pepper and sauté until soft, about 3-4 minutes.
- Stir in the diced tomatoes and cook until they soften and release their juices, around 5 minutes.
- Season the mixture with salt, black pepper, and red pepper flakes to taste.
- Reduce the heat to low and pour in the beaten eggs, stirring gently to combine with the vegetables.
- Cook for about 3-4 minutes until the eggs are just set but still creamy.
- Remove from heat and sprinkle with chopped parsley before serving.
- Serve warm with crusty bread for dipping.
