Coconut sweet bread

Ingredients
- 500 g all-purpose flour
- 200 g granulated sugar
- 10 g baking powder
- 5 g salt
- 200 g grated fresh coconut
- 300 ml coconut milk
- 2 tsp vanilla extract
- 1, beaten egg
- 50 g butter, melted
Method
- Preheat the oven to 180°C (350°F) and grease a loaf pan.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Stir in the grated coconut until evenly distributed.
- In another bowl, mix together the coconut milk, vanilla extract, beaten egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Transfer the batter into the prepared loaf pan, smoothing the top.
- Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
