Jamaican brown stew chicken

Ingredients
- 1 kg chicken pieces, skinless
- 1 onion, sliced
- 1 bell pepper, sliced
- 4 cloves garlic, minced
- 2 cm ginger, grated
- 4 sprigs thyme, fresh
- 1 scotch bonnet pepper, whole
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 3 tbsp vegetable oil
- 1 carrot, sliced
- 1 tomato, chopped
- 250 ml chicken broth
- to taste black pepper, ground
- to taste salt
Method
- Marinate the chicken pieces with soy sauce, garlic, ginger, salt, and black pepper for at least 1 hour, preferably overnight.
- Heat vegetable oil in a large pot over medium heat. Brown the marinated chicken pieces on all sides, then remove and set aside.
- In the same pot, add onions, bell peppers, and carrots. Sauté until softened, about 5 minutes.
- Stir in brown sugar and allow it to caramelize slightly before adding the chopped tomato, thyme, and scotch bonnet pepper.
- Return the chicken to the pot and add chicken broth. Bring to a simmer, cover, and cook on low heat for about 30 minutes.
- Check for seasoning and adjust with salt and pepper. Remove the scotch bonnet pepper before serving.
- Serve hot with rice and peas or steamed vegetables.
