Trinidadian curry crab and dumplings

Ingredients
- 1 kg live crab, cleaned and cut into pieces
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 green bell pepper, diced
- 1 tomato, chopped
- 2 tbsp curry powder
- 2 sprigs thyme, fresh
- 400 ml coconut milk
- 200 ml water
- to taste salt
- to taste black pepper
- 500 g dumpling flour
- 1 tsp baking powder
- to taste water, for dumplings
Method
- In a large pot, heat oil over medium heat. Add onions, garlic, and ginger; sauté until fragrant.
- Add the crab pieces to the pot, stirring to coat in the aromatics.
- Sprinkle in the curry powder, thyme, salt, and black pepper, mixing well.
- Pour in the coconut milk and water, bring to a gentle simmer, and cook for about 20 minutes, allowing the flavors to meld.
- For the dumplings, in a bowl, mix flour, baking powder, and a pinch of salt. Gradually add water until a soft dough forms.
- Shape the dough into small balls or discs, and drop them into the simmering crab sauce.
- Cover the pot and cook for an additional 15 minutes until the dumplings are cooked through and fluffy.
- Taste and adjust seasoning if necessary, then serve hot.
