Syrniki (Ukrainian cottage cheese pancakes)

Ingredients
- 400 g cottage cheese, drained
- 1 egg
- 2 tbsp sugar
- 1 tsp vanilla extract
- 100 g all-purpose flour, plus extra for dusting
- 1 tsp baking powder
- a pinch salt
- to taste butter, for frying
Method
- In a bowl, combine the drained cottage cheese, egg, sugar, and vanilla extract, mixing well until smooth.
- Add the flour, baking powder, and salt to the mixture, stirring until just combined. The dough should be soft but manageable.
- Dust your hands with flour and shape the mixture into small pancakes, about 1 cm thick.
- Heat a skillet over medium heat and melt a bit of butter. Place the syrniki in the skillet, leaving space between them.
- Cook for about 3-4 minutes on each side until golden brown and cooked through.
- Remove from the skillet and keep warm while you cook the remaining pancakes, adding more butter as needed.
- Serve warm with sour cream, jam, or fresh fruit.
