Ukrainian Potato Babka

Ingredients
- 1 kg potatoes
- 200 g onion
- 2 eggs
- 100 g flour
- 1 tsp salt
- 1/2 tsp black pepper
- 100 ml sunflower oil
- 1 tsp baking powder
- 2 tbsp fresh dill
Method
- Preheat the oven to 180°C (350°F).
- Peel and grate the potatoes and onion using a box grater or food processor.
- In a large bowl, combine the grated potatoes and onion with eggs, flour, baking powder, salt, and pepper. Mix well until combined.
- Add the chopped fresh dill and mix again.
- Grease a baking dish (about 30x20 cm) with sunflower oil. Pour the potato mixture into the dish, spreading it evenly.
- Drizzle the remaining sunflower oil on top of the mixture.
- Bake in the preheated oven for 45-55 minutes, or until the top is golden brown and crispy.
- Remove from the oven and let it cool for a few minutes before slicing. Serve warm.
