Basbousa

Ingredients
- 250 g semolina
- 200 g yogurt
- 150 g sugar
- 1 tbsp baking powder
- 100 g unsalted butter, melted
- 250 ml water
- 2 tbsp lemon juice
- for garnish, to taste sliced almonds
Method
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine semolina, yogurt, sugar, baking powder, and melted butter. Mix until well combined.
- Pour the batter into a greased rectangular baking dish, smoothing the top evenly.
- Using a knife, score the surface into diamond shapes and place an almond in the center of each piece.
- Bake in the preheated oven for about 30-35 minutes, or until golden brown.
- While the cake is baking, prepare the syrup by boiling water and sugar together for about 10 minutes. Add lemon juice and simmer for another 5 minutes. Let cool.
- Once the cake is done, remove it from the oven and pour the cooled syrup evenly over the hot cake.
- Allow the basbousa to absorb the syrup and cool before cutting along the scored lines.
