Mujadara
Mujadara is a classic Lebanese dish featuring lentils and rice, topped with caramelized onions. This hearty meal is often enjoyed during festive occasions and offers a satisfying balance of flavors and textures, making it a beloved comfort food in Lebanese cuisine.

Ingredients
- 200 g green or brown lentils
- 200 g long-grain rice
- 2 onion, thinly sliced
- 4 tbsp olive oil
- 800 ml water
- 1 tsp ground cumin
- to taste salt
- to taste black pepper
- for garnish fresh parsley, chopped
Method
- Rinse the lentils under cold water, then place them in a pot with 800 ml of water. Bring to a boil, then reduce to a simmer and cook for about 15 minutes until tender.
- While the lentils are cooking, heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes.
- Once the lentils are cooked, add the rinsed rice, ground cumin, salt, and pepper to the pot. Stir well to combine.
- Pour in an additional 400 ml of water, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes until the rice is cooked and has absorbed the water.
- Remove from heat and let it sit covered for another 10 minutes to steam.
- Fluff the lentil and rice mixture with a fork and serve on a large platter.
- Top with the caramelized onions and garnish with fresh chopped parsley.
