Fattoush
Fattoush is a vibrant Lebanese salad that brings together fresh vegetables and crispy bread, tossed in a tangy sumac dressing. It’s a refreshing dish, perfect for warm days or as a side to grilled meats.

Ingredients
- 2 pita bread, cut into triangles
- 200 g romaine lettuce, torn into bite-sized pieces
- 2 tomato, diced
- 1 cucumber, diced
- 5 radishes, thinly sliced
- 1 bell pepper, diced
- 3 green onion, chopped
- 50 g parsley, chopped
- 30 g mint leaves, chopped
- 2 tbsp sumac
- 4 tbsp olive oil
- 2 tbsp lemon juice
- to taste salt
Method
- Preheat the oven to 180°C.
- Place the pita bread triangles on a baking sheet and drizzle with 1 tablespoon of olive oil. Bake for about 10-15 minutes until crispy and golden brown.
- In a large bowl, combine the lettuce, tomatoes, cucumber, radishes, bell pepper, green onions, parsley, and mint leaves.
- In a small bowl, whisk together the remaining olive oil, lemon juice, sumac, and salt to create the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Add the crispy pita bread just before serving to maintain its crunch.
- Serve immediately in a large salad bowl or individual plates.
