Ingredients
- 400 g canned diced tomatoes
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 2 tbsp olive oil
- 1 tsp paprika
- to taste salt
- to taste black pepper
- 4 eggs
- for garnish fresh parsley
Method
- Heat olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and diced bell pepper, cooking for another 3-4 minutes.
- Add the canned tomatoes, paprika, salt, and pepper. Simmer for 10 minutes until the sauce thickens slightly.
- Make four small wells in the sauce and crack an egg into each well.
- Cover the skillet and cook for about 5-7 minutes, or until the eggs are set to your liking.
- Remove from heat and garnish with fresh parsley before serving.
