Ingredients
- 1 L vegetable broth
- 400 g canned tomatoes, crushed
- 1 onion, diced
- 1 carrot, grated
- 2 cloves garlic, minced
- 100 g pasta (e.g., small macaroni)
- 2 tbsp olive oil
- 1 tsp dried oregano
- to taste salt
- to taste black pepper
- for garnish fresh basil, chopped
Method
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated carrot, cooking for an additional 2 minutes.
- Pour in the crushed tomatoes and vegetable broth, then add the dried oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
- Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh chopped basil.
