Ingredients
- 50 g dried porcini mushrooms
- 200 g fresh button mushrooms, sliced
- 30 g butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 L vegetable broth
- 200 ml heavy cream
- to taste salt
- to taste black pepper
- 2 tbsp fresh parsley, chopped
Method
- Soak the dried porcini mushrooms in warm water for about 30 minutes, then drain and chop them.
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and sliced fresh mushrooms to the pot, cooking until the mushrooms soften and release their juices.
- Stir in the chopped porcini mushrooms and cook for another 3-4 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Add the heavy cream to the soup, stirring well to combine, and season with salt and black pepper to taste.
- Simmer for an additional 5 minutes, allowing the flavors to meld together.
- Serve hot, garnished with fresh parsley.
