Ingredients
- 300 g jasmine rice, cooked and cooled
- 3 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 onion, diced
- 1 carrot, diced
- 100 g peas, frozen
- 2 egg, beaten
- 3 tbsp soy sauce
- 2 spring onions, sliced
- to taste lime wedges, for serving
Method
- Heat the vegetable oil in a large skillet or wok over medium heat.
- Add the minced garlic and diced onion, sautéing until fragrant and the onion is translucent.
- Stir in the diced carrot and frozen peas, cooking for about 3-4 minutes until tender.
- Push the vegetables to one side of the skillet and pour in the beaten eggs, scrambling them until cooked through.
- Add the cooked jasmine rice to the skillet, breaking up any clumps and mixing well with the vegetables and eggs.
- Pour in the soy sauce, stirring to evenly coat the rice and heat through, about 2-3 minutes.
- Stir in the sliced spring onions, cooking for another minute.
- Serve hot with lime wedges on the side for squeezing over the dish.
