Khao Soi
Khao Soi is a northern Thai curry noodle soup that's both warm and comforting. With a rich coconut curry broth, tender chicken, and crispy noodles, it's a festive dish perfect for gatherings and special occasions.

Ingredients
- 200 g egg noodles, boiled
- 300 g chicken thighs, boneless and skinless
- 400 ml coconut milk
- 300 ml chicken stock
- 3 tbsp red curry paste
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 1 tsp sugar
- 2 spring onions, chopped
- to taste coriander leaves, for garnish
- to taste crispy fried noodles, for garnish
Method
- Heat a pot over medium heat and add a splash of oil. Sauté the onion until translucent.
- Add the garlic and ginger, cooking for another minute until fragrant.
- Stir in the red curry paste and cook for 2-3 minutes to release its aroma.
- Add the chicken thighs and cook until lightly browned on all sides.
- Pour in the chicken stock and coconut milk, and bring to a simmer.
- Reduce heat and cook for 20 minutes until chicken is tender; shred it in the pot.
- Add fish sauce, lime juice, and sugar, adjusting to taste.
- Serve the noodle soup in bowls, topped with shredded chicken, crispy fried noodles, spring onions, and coriander.
