Ingredients
- 300 g green papaya, shredded
- 50 g carrot, shredded
- 100 g cherry tomatoes, halved
- 50 g green beans, cut into 3 cm pieces
- 50 g peanuts, roasted
- 3 tbsp lime juice
- 2 tbsp fish sauce
- 1 tbsp palm sugar
- 2 bird's eye chilies, chopped
- 2 cloves garlic, minced
Method
- In a large bowl, combine the shredded green papaya and carrot.
- Add the green beans and cherry tomatoes to the bowl.
- In a separate bowl, mix the lime juice, fish sauce, palm sugar, garlic, and chopped chilies until the sugar dissolves.
- Pour the dressing over the salad ingredients and toss well to combine.
- Add the roasted peanuts and give it a final gentle mix.
- Taste and adjust seasoning as needed, adding more lime juice or fish sauce to preference.
- Serve immediately in a traditional Thai bowl, garnished with extra peanuts and a lime wedge.
