Feijoada

Ingredients
- 500 g black beans, soaked overnight
- 300 g pork shoulder, cut into chunks
- 300 g beef brisket, cut into chunks
- 200 g smoked sausage, sliced
- 100 g chorizo, sliced
- 2 bay leaves
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- 200 g collard greens, chopped
- 1 orange, cut into slices
Method
- In a large pot, heat the olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the pork shoulder and beef brisket to the pot, browning the meat on all sides.
- Stir in the soaked black beans, smoked sausage, chorizo, bay leaves, salt, and pepper.
- Add enough water to cover the beans and meat by about 2 cm, and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 2-3 hours, or until the beans and meat are tender.
- In the last 30 minutes, add the chopped collard greens to the pot and stir well.
- Remove the bay leaves before serving and adjust seasoning if necessary.
- Serve hot with white rice and orange slices on the side.
