Ingredients
- 600 g white fish fillets, such as tilapia or snapper
- 2 tbsp lime juice
- 400 ml coconut milk
- 1 onion, sliced
- 1 bell pepper, sliced
- 2 tomato, chopped
- 3 cloves garlic, minced
- 1/2 cup fresh cilantro, chopped
- 3 tbsp palm oil (dendê oil)

Method
- Marinate the fish fillets in lime juice, salt, and black pepper for about 30 minutes.
- In a large pot, heat the palm oil over medium heat and sauté the onion and garlic until translucent.
- Add the bell pepper and tomatoes to the pot, cooking for another 5 minutes until softened.
- Pour in the coconut milk and bring the mixture to a simmer.
- Add the marinated fish fillets to the pot, ensuring they're submerged in the sauce. Cook for 10 minutes until the fish is cooked through.
- Stir in the chopped cilantro, adjust seasoning with salt and pepper, and simmer for another 2-3 minutes.
- Remove from heat and let it rest for a few minutes before serving.
