Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 1 carrot, diced
- 1 stalk celery, diced
- 2 cloves garlic, minced
- 400 g diced tomatoes
- 200 g lentils, rinsed
- 1.5 L vegetable broth
- 1 bay leaf
- to taste salt
- to taste black pepper
- 2 tbsp, for garnish fresh parsley, chopped
Method
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced tomatoes, lentils, vegetable broth, and bay leaf to the pot. Bring to a boil.
- Reduce the heat and let the soup simmer for about 25-30 minutes, or until the lentils are tender.
- Remove the bay leaf, then season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
